There are so many varieties of beets to choose from. Here is a list of some of the ones we’ve tried and would recommend.
We have grown the Chioggia beet variety many times over the years, however ours never get as defined as in this picture. It is, however, a very good flavorful variety. If there is a “trick” to getting the good definition in color, please let us know. This is an heirloom variety! – Bren

Cylindra beets are long and easy to slice. Make certain to have deep soil to grow them. – Bren

An open-pollinated heirloom variety developed in the late 1800’s. The beet root is round, sweet, and rich in flavor. This is a good beet for pickling. – Bren

We have grown this Early Wonder Beet variety for many years. The beets are very uniform in size and make great beets for canning. We also use the tops in salads when they are young. This is a wonderful beet and we highly recommend it. – Bren

This is a specialty beet variety. The beet is a golden color, and both the greens and root are good to eat. – Bren

We have grown the Merlin Hybrid beet several times. It is a good flavored beet. The uniformity, however, is not good. We celebrate individuality – and this beet delivers! – Bren

We have not tried to make sugar from these (yet!), but they do make for a nice treat for your livestock. – Bren

This is a nice beet for the roots or the leaves. Use the roots to make pickled beets or pressure can them. Very tasty. The leaves are great mixed with other salad greens. (As a bonus if I get too many of the leaves and I can’t use them, I feed them as a “treat” to the goats)! – Bren
